I am a work in progress. That’s what it boils down to. I’ve had chronic issues my whole life, and the past few years, my awesome doctor and I have been basically experimenting, trying to rule things out (or in). Frankly, I think I might write about it. Because I can’t be the only one in going through this. 🙂 But after my latest couple of visits, I’ve been taking a much closer look at my food and experimenting with more recipes.
In the spirit of sharing, here are some interesting ones I’ve run across the past week or so!
Spicy & Light Kung Pao Chicken Meal Prep (I actually made this for lunch the week before last and it was DELISH. It’s on my keeper list!)
Thai Peanut Shrimp & Rice Salad Bowl (I’ll have to skip the cabbage, since I’m allergic to it. The purple is pretty though!)
Bell Pepper Nachos (though admittedly, I’m really not sure. I do so like my tortilla chips in my nachos.)
