Unfortunately for me, my numerous drafts in progress were all lost recently due to a hacking incident. It really sucks and as a writer, I’m ashamed of myself for not having backup copies somewhere. But since I don’t want you to think I’ve totally disappeared off the face of the Earth, I have a little cooking tip to share with you at least!
One of my family’s favorite “cheat meals” is homemade Mac & Cheese. Not a healthy meal at all, though I do try to health it up a bit by using skim milk, part skim cheese, etc. But this is why we call it a cheat meal.
After going gluten free a few years ago, making this meal with gluten free pasta just didn’t come out the same. But after experimenting and failing a lot, I’ve cracked it. No more soggy, glue-like noodles!
Here’s my favorite combo — Quinoa pasta and under-cooking.
Quinoa pasta seems to hold up the best in my house. And only boiling the pasta for 3 to 4 minutes before combining it with the sauce I’ve made makes it come out just right after 20 minutes in the oven.
Though I am going to experiment with more varieties. Costco hasn’t had my favorite quinoa pasta in a while and my supply is running low. 🙂
